Pickle Brine Chicken

Serves 4


  • dillicious Straight Up Garlic Chips (reserve pickle brine).
  • 1kg chicken drummettes
  • 1 tbsp plain flour
  • Salt & pepper
  • Fresh dill, chopped
  • Chipotle mayonnaise, to serve


Preheat oven to 180C.

Combine chicken drummettes and flour in a large mixing bowl. Season generously with salt & pepper and stir to combine.

Add pickle brine and stir to coat, until glossy.

Bake chicken drummettes in a large baking tray, covering with half a cup of the brine juices. Cook for 35-40 mins until golden brown, turning occasionally.

Transfer to a serving plate, scatter with fresh dill and serve with pickle chips and chipotle mayonnaise on the side.
