Spicy Pickle Slaw

Never waste your pickle brine. You can serve up a pickleback (a shot of pickle brine and a shot of whiskey) or you can whisk it into the dressing used for our Spicy Pickleback Slaw.

  • 1 small head green cabbage
  • 1 small head red cabbage
  • ½ cup Oh So Spicy pickle chips
  • 2 carrots, grated
  • 2 Granny Smith apples, grated
  • ½ cup mayonnaise
  • ¼ cup Dillicious Oh So Spicy pickle brine
  • 1 tablespoon Dijon mustard
  • Habanero Chillies, from jar
  • ¼ cup hazelnuts
  • Kosher salt
  • Freshly cracked pepper
  • Instructions

    1. Cut the cabbages in half and remove the core from each side. Cut each half in half and slice each resulting quarter into thin ribbons. Mix with pickles, carrots and apples in a large bowl.
    2. In a separate bowl, whisk together the remaining ingredients.
    3. Pour the dressing over the cabbage and toss. Season to taste. The coleslaw may be covered with plastic wrap and refrigerated. Toss again before serving.
    4. Sprinkle with hazelnuts.
